Sous Chef :
Acting Chef in Chef ’s absence
Take charge of ordering and receiving, making sure restaurant is never without proper product
Receives product, diligently checks physical orders against invoices
Aids in menu planning / development and executes changes within guidelines of Satchel’s brand
Conducts pre / post service line checks and writes closing prep / order lists with line cooks
Maintain clean and sanitary kitchen. Hold all kitchen team to highest standards and accountability to cleaning guidelines
Participates in education of all kitchen team
Maintains organized and orderly dry storage and coolers
Conduct monthly inventory count with assistance from Chef
Working knowledge of all kitchen stations
Model sense of urgency and instill that in team
Monitor all dishes leaving kitchen for quality, appearance
Monitor food / labor costs to ensure within food purchase / labor budget
