Executive Pastry Chef
The Executive Pastry Chef is responsible for managing the daily operations of our bakery and restaurant, including the selection, development, and performance management of our team and ensuring that our guests have a world-class customer service experience.
The Executive Pastry Chef will be responsible for but not limited to :
- Daily production for items, including but not limited to, bread, croissant, brioche, desserts, cookies...
- Management of a team of 25 / 30
- Management of all ordering and acceptance of daily deliveries and ability to keep things within set cost margins with suppliers
- Handles daily scheduling and hours and management of payroll
- Management of interviewing, hiring, training, and reviewing of BOH staff
- The Executive Pastry Chef will develop and create the dessert menu and recipes with the team, including working on packaging
- Management of organization of kitchen, including organization and cleanliness of dried storage, walk-ins, and dairy fridge
- Daily quality checks of products
- Attend certain outside events and programs
Qualification Requirements :
- Minimum 4 years experience in a Boutique / Artisan Bakery with a focus on bread, pastries, desserts and laminated dough
- A genuine passion and knowledge of food and pastries
- Prior experience in an Upscale Boutique / Artisan Pastry Shop
- Experience with service and expediting
- Sociable and friendly to staff and guests.
- Must be meticulously clean and aware of all food safety standards (Serv Safe Certification is a plus)
In addition to these responsibilities, as the Executive Pastry Chef, the most important thing is to maintain flexibility and jump in wherever you are needed as various duties may arrive outside of this list.
The Executive Pastry Chef may have to cover shifts for those on their team that are not there, for instance. Or work holidays.
Or follow up on maintenance for items that may be breaking. We work in a hands-on industry. You are the leader for our culinary team and a role model.
