THE JOB :
The Banquet Manager at Mandalay Bay is responsible for overseeing all aspects of daily banquet operations, ensuring service is delivered in accordance with departmental standards and property policies. This role manages and directs a wide range of banquet functions, including breakfasts, lunches, receptions and dinners, coffee breaks, booth deliveries, cash concessions, and snack bars on the tradeshow floor, while maintaining exceptional service quality and operational efficiency.
THE DAY-TO-DAY :
- Manages banquet operations, cash concessions, snack bars, event setups, staffing ratios, room layouts, and menu execution in line with departmental goals
- Oversees Assistant Managers and Supervisors, ensures compliance with policies, safety rules, service standards, and collective bargaining agreements, and supports staff development
- Works with Catering Managers on event planning, attends pre-planning meetings, reviews Banquet Event Orders, pre-books staff for major events, and communicates updates in team meetings
- Handles inventory, ordering, COG control, weekly banquet scheduling per contract requirements, and overall guest service performance
- Participates in training, supports process and product improvements, promotes a positive work environment, and maintains consistency with Mandalay Bay standards
